The winners of the 7th International Contest for Note by Note Cooking


The winners
of the 7th International Contest for Note by Note cooking are…



The 7th of June 2019, at AgroParisTech (Paris, France), the final event of the 7th International Contest for Note by Note Cooking was organized by Hervé This, director of the Inra-AgroParisTech International Centre for Molecular and Physical Gastronomy, Roisin Burke, from TU Dublin and Yolanda Rigault.



This final event was taking place after scientists and professors from 15 countries had met in Paris for the 9e International Workshop of Molecular and Physical Gastronomy.



Among the criteria for evaluating the dishes proposed by competitors (from 20 countries!), the jury (including the chef Patrick Terrien, Yolanda Rigault, Michael Pontif, Sandrine Kault-Perrin) insisted on
- « purety » of preparations (as many pure compounds, no fruits, vetgetables, meat, fish, spices…)
- innovation
- complexity
- being close to the two topics proposed diracs (reproductions of meat ) and cocktails
- flavour !



Prizes were given by categories:



Students :
1e prix ex aequo : David Hurley, TU4Dublin, Ireland ; Eugenia Xynada, TU4Dublin Ireland
3e prix : Inthuja Manickam, FIPDES Master Student, Indonesia
4e prix : Aziliz Le Bescond, Chimie ParisTech, France

Chefs :
1. Eugene Lee Choi & Ye Eun Kim, Hanyang University, Seoul, Korea
2. Marc Saillard et Bernard Clausse

3e Group :
Rohit Srivastava, India (en cours de thèse à AgroParisTech, France)
