Final Event of the 14th International Contest of Note by Note Cuisine
The 4th of September, on the AgroParisTech campus of Palaiseau, France (Amphitheater A0.04), but also online (https://agroparistech-fr.zoom.us/j/92937084463?pwd=amAeYGDLr7g9Av42Dx2MbSR32dcy1X.1), the final event of the 14th International Contest of Note by Note Cuisine will take place.
The topic select is : Reduce the costs, reduce the calories, but mind the flavour.
After a presentation of Synthetic cooking and Note by Note cuisine, the six pre-selected competitors have been pre-selected will present the dish that the submitted to the contest, to a jury including :
- Chef Patrick Terrien, Académie culinaire de France, International Club Les Toques blanches
- Chef Guillaume Siegler, Institut Cordon bleu
- Dr Mike O'Connor, Head of Discipline, Culinary Studies School of Culinary Arts & Food Technology at Technological University Dublin, Ireland
- Yolanda Rigault, biochemist, organizer
Roisin Burke, professor in molecular and physical gastronomy, Technological University Dublin, Ireland, and organizer.
During the evaluation by the jury, the chef Pasquale Altomonte and the biochemist Dao N’Guyen (Kitchen Lab Food) will make an online demonstration.
And the event will be concluded by the prize giving ceremony.
