Your challenge was very difficult! I a...Dear Hervé,<br />Your challenge was very difficult! I agree with you about the subjectivity of any list which categorizes chefs and restaurants. However, I think that guides and lists like the 50 Best show a tendency and some trends around the world. Restaurants like D.O.M. in Brazil, from Chef Alex Atala, or Osteria Francescana, from Chef Massimo Bottura became recognized worldwide after their inclusion in the 50 best list, and now, not only Brazilians and Italians know about these two fabulous places. Anyway, there is no right formula for fairness, but only the good intention of guides, gourmands, and food lovers to promote good food around the world. I tried to put together a list of restaurants which I remember as unforgettable dinning experiences (without a particular order).
